Greek Lamb Salad
8 Lambtastic seasoned saltbush Lamb Cutlets
2 cloves Garlic sliced thinly
1 Lemon sliced
8 sprigs of fresh Thyme
1 pinch of Salt & cracked Black Pepper
75mls Olive Oil
Marinate your Lamb Cutlets with the above ingredients 2hours before cooking, or overnight if applicable.
Salad
1 Baby Cos torn into bite size pieces
½ Red onion Sliced Thinly
8 Cherry Tomatoes cut in ½
½ Continental Cucumber sliced
1 Red capsicum sliced thinly
Dressing
50ml Lemon Juice
100ml Extra Virgin Olive oil
1 Clove Garlic crushed
8 sprigs of fresh thyme chopped finely
Salt & Pepper to taste
Whisk all ingredients together and toss required amount with the Salad just before you are ready to serve.
Tzaziki
150ml Greek Style Yoghurt
2 cloves Garlic crushed
25ml Lemon Juice
½ Continental Cucumber Grated
Salt & Pepper to taste
Mix together above ingredients.
Cook Marinated cutlets to your liking serve 2 cutlets on top of your fresh salad. Garnish with Tzaziki.
