Moroccan Braised Chump Chops & Fresh Greens

8 Lambtastic saltbush Chump Chops
2tbsp Olive oil
1 400g Tin Crushed Tomatoes
2 cloves Garlic Crushed
1 Onion Diced
2tbsp Moroccan Seasoning
8 Button Mushrooms quartered
150ml Vegetable Stock

Preheat pan on High, seal the Chump Chops, remove from pan and set aside for later.
In the same pan, fry off Olive oil, onions, Garlic, mushrooms & Moroccan Seasoning until Softened.
Add Crushed Tomatoes simmer for 2minutes then return the Chump Chops to the Pan, add enough Vegetable Stock to just cover the meat.
Simmer for 30 to 40 minutes or until meat is tender and sauce is thick.

Greens
1bunch Asparagus, with the bottom woody part removed
150g Snow Peas, strings removed
1 Bunch Brocolini, chopped in ½
1tbs Butter
1tsp Poppy seeds

Bring a ½ full Steamer to the Boil.
Steam the asparagus, Snow peas & Brocolini for 5 minutes.
Toss in a bowl with Butter & Poppy seeds prior to serving.
